Easy Enchiladas

My husband is a big fan of mexican food and his mother used to make large helpings of enchiladas for the family when he was younger. I had to learn how to make these quickly and deliciously!!! Here's my recipe to share with all of you! Hope you ENJOY!!!!



Serves 12

Dishes needed:
Skillet
Casserole dish



Ingredients:
Non stick coating spray (I get it from the dollar tree)
12 flour tortillas
2 lbs ground beef
4 cups shredded cheese
28oz can of enchilada sauce
10 oz refried beans
1 package of enchilada seasoning (found near taco seasoning)



Directions:

1. Turn oven on 400.
2. Ground beef until no pink appears, drain.
3. Mix in enchilada seasoning packet, refried beans and a 1/2 cup of cheese.
4. Pour 8oz of enchilada sauce in mixture and heat thoroughly.
5. Spray casserole dish with non stick coating.
6. Take tortilla and lay 2 tablespoon scoops of mixture in the middle.
7. Sprinkle cheese on top of mixture and roll enchilada style.
8. Repeat steps 6 & 7 until done.
9. Heat in oven for 20 minutes.
